Book on meat products technology by BEU associate professor has been published

A new book by Arshad Guliyev, Associate Professor at the Department of Food and Biotechnology of Baku Engineering University (BEU), has been published. The publication, titled “Technology of Meat and Meat Products,” covers fundamental knowledge in the field of food engineering.

 

The book analyzes the technology of meat and meat products based on scientific foundations and a modern approach. Starting from the morphological and chemical composition of meat, the author provides a detailed presentation of primary animal processing, changes occurring during meat storage and freezing, as well as the production technologies of semi-finished products, sausage products, and canned meat.

 

This textbook has been prepared in full compliance with the curriculum of the “Food Technology” specialty at higher education institutions and includes not only theoretical knowledge but also practical information necessary for industrial practice.

 

At the same time, the book, which will serve as an important reference source for researchers and specialists working in the production sector, will contribute to the development of the meat industry in the country and to the training of qualified personnel.
